So this isn’t the first time this has happened but i’ll start a course it’ll run the course but if stop the course then resume it will try to fold the implement restart the whole course and it’s kinda annoying
Or last waypoint to resume where it stopped.

Courseplay defaults to restart at "first waypoint". In this situation what you want is to restart at "nearest waypoint".
If you're on PC (not sure about other platforms - probably the same), you should have a little Courseplay box showing in the UI. In that little box click on "first waypoint" until it shows "nearest waypoint" then restart the CP AI.
