Exactly, I was looking for this comment. A well made pancake is leagues better than even the best waffles, but it is easy to screw up pancakes, resulting in a soggy pancake without great flavor and unappealing texture. The ceiling of pancake quality is very high, while the floor is very low.
It's hard to screw up waffles; even using a standard waffle mix and iron will give you decent waffles. The floor isn't low, and the ceiling isn't very high.
If I was going to a cheap diner that isn't well known to make good food? I'd choose waffles every time. Going to a gourmet dining experience? Pancakes for sure.
Waffles. When they are good. A place that used to exist near my house did a waffle with a nice thick batter and it was the best chicken and waffles I've ever had. Nothing in the years since comes even remotely close. My home-made belgian waffles are good but they aren't the same either. Especially with the pearl sugar pieces in them.
Most waffles, however, are basically what you get at a hotel for breakfast and while those are alright I'd rather french toast. Pancakes are decent in diners but I can't stand them in places like IHOP.
Pancakes with an over easy egg on top. My local casino diner has good ones. They come with sausage or bacon too, but that goes to my son. Now I'll have to make the trip up the street this weekend 🥞🍳 because it's in my head now!
I generally make pancakes because the cleanup is quicker. Cleaning my electric waffle maker is several minutes and it the. Has to sit on its side drying thoroughly. I don’t use it all that often so I have to get all the cooking oil off every time.
