I'm looking for fast reliable ways to make money.
I feel like fishing is a solid way to make money, along with selling like foraging items.
Ancient fruit, made into wine, and preserves. If you haven't gotten any ancient seeds yet, plant strawberries in spring, blueberries in summer, and cranberries in fall. They provide multiple harvests and sell for a decent amount of money, though not as good as ancient fruit.
Truffle oil is also very profitable, if you have a barn and can afford pigs.

Fast and reliable way to make money early game: Fishing. Esp on the beach or mountain lake.
Not fast at first but fast and reliable with less effort than fishing: Barn Animals, Cheese, Truffle
Not fast, very reliable and the one that will make you money the most: Ancient and Starfruit wine.
My own recommendation would be Pale Ale, Hops are very cheap, grow every two days, turns into pale ale rather quickly and they sell for a lot. Or if you have a lot of crystalariums you can have diamond farms.
Starfruit/ancient fruit wine
Star-/ancientfruit wine is by far the best way to get money but requires a very end-game setup. Otherwise regrow plants, challenge bait fishing + smoker, skull cavern dives, fairy rose honey, cheese/mayo are all fine given you can get a solid amount.
To really make money (mostly passively) you need to get at least one ancient fruit/seed and a seed maker. Greenhouse and iridium sprinklers are preferred, but not required. Keep turning ancient fruits into seeds and planting them until you have at least 80 or so plants going (full greenhouse with iridium sprinklers gets you 116 plants). At the same time keep making kegs (you'll need a lot of oak resin so start tapping) until you have at least as many kegs as you have ancient fruit plants. Then it's just a matter of collecting fruits and putting them into kegs and go about your business. 6 and a half days later, sell all the wine and repeat. Full greenhouse will get you around 180-200k every in-game week.
There are more profitable ways in terms of gold per hour/day, but whats nice about this method is that it's low maintenance (you don't need to replant ancient fruit) and you can do other things while your money is being made. I like to wait until I have enough ancient fruits to fill all the kegs so you do them in batches and all of them are ready at the same time. This allows you to be free for 6-7 days to do other things and not check your kegs every day. Ancient fruit regrows every 7 days so it almost coincides with how long it takes to turn it into wine. If you do a batch every week, it creates a pretty efficient workflow: by the time your wine batch is done, you'll have another batch of ancient fruit ready to go. But you do have to keep checking/collecting your fruit plants every day (unless you plant them all at the same time too, which is unlikely given how hard it is to obtain so many ancient seeds without using a seed maker).

Depends on your game progression, coop vs singleplayer and how you define fast.
In singleplayer time pauses while fighting to reel in a fish which makes fishing a very quick ingame money activity for getting money in that same day, for example if you need to get extra money before a event to buy stuff from a town festival shop or came up a few bucks short of buying a backpack/building/animal
Farming gets stronger the longer the game goes on:
More money to start means more seeds which means more profit on harvest day, for example at the start, I spend all the starting cash on parsnip seeds, knowing that that 20g/seed will yield a 35g/parnsip for 15g profit each on the 5th day when they grow.
As you level farming you get some important recipes.
Farming level 6 brings the quality sprinkler, letting you automatically water massive fields, allowing you to make massive hauls, one farm a few years in was making 100k a week thanks to a large field of sprinklers auto watering crops.
Farming unlocks the kegs and preserve jars, things you can stick crops in for several times their base sell value after a couple days of fermenting/pickling
