Too start off every studio in the entirety of film making asks or requires at least one famous or well known actor to be in productions so that they can drive in an audience, this is a well known industry tactic. But here are specific names who were not well known when filming Star Wars.

Put Hiroyuki Sanada in James Mangold's Dawn of the Jedi movie, make him a some sort of weaponsmith/"normal" (metal) swordsman that teaches the first Jedi about weapons to supplement their Force powers. At the climax of the movie the character reveals the first prototype lightsaber that he/the Jedi wield in battle
I would actually want him to portray THE first Jedi.
George Lucas initially wanted Toshiro Mifune to play Ben Kenobi (the "first" Jedi) in ANH before he turned it down and the role was offered to Alec Guinness.
Mifune played Toronaga in Shogun (1980), and Sanada took on his role in the recent remake.
All I'm saying is, it would be poetry....

I may be solo (no pun intended) in this, but there is a part of Star Wars that I really respect and love, which is that they use lesser-known or newer actors to play roles. Are the actors you mentioned good? Yes, absolutely. But I think having newer or less known (but still remarkable) actors or actresses separates the series in a sense. If you have seen an actor before in another movie, it can kind of takes away from that character to remind you of that other movie. If there is a new face, it keeps the in universe new, fresh, and ultimately unique.
