Pici, is good restaurant, gf and I went there for a date last week and we both loved their ravioli, and they have locations all around hk
I like Pici’s as well. I like the food, they have great service, and it’s not too expensive. I think it would be a good first date spot.
PICI sucks as a pasta joint. Honestly. Plenty of better pasta places than this resto.

Grand Hyatt cafe. Their pasta, I was really pleasantly surprised by how good it was.
Ask for Alonzo. This is more Pici level but I find it better
Associazione Chianti. They're know for their Florentine Steak but the pasta is also dope.
The only thing good at Ask for Alonzo is the spaghetti carbonara (if not slightly oversalted). Everything else has been a disappointment

Don't know if you're joking or being serious, but I was taking an Uber last year in Singapore around the time when travel restriction was lifted, got talking with the driver and she asked if we're from HK, we said yes, then she said she missed HK, things like yum cha and "breakfasts at Cafe de Coral 大家樂早餐", we laughed our asses off 😂 Out of all the things you would think a tourist would miss in HK, Cafe de Coral was not on my list.
I'm in India at the moment and I miss Cafe De Coral and Fairwood. Quick, fast and convenient and somehow cheaper than McDonalds and KFC.

The black sheep restaurants are normally a good shout - some of which have already mentioned here. Good food and good vibes! There’s a really cute Japanese yakitori restaurant in Tai Hang called Moto. Yardbird is also delish and fun! Depends what type of vibe you want to go for.

I always preferred coffee shops for first dates but for restaurants I would say Ink in TST, La Paloma or Man Mo Dim Sum in Sheung Wan is quite nice too.

Call Me Al in Sheung Wan. Fun cocktails. Cool playlist in the background. Sharing plates. You can have several drinks and still escape for under $2000. Try the pork chop.
Do you care if the food is "just good" or do you expect the food to be exceptional. i.e. what's your focus? A place where you can talk and get to know each other? Or a place where the food is the centerpiece?

Chances are your date has tried most common cuisines already (you're in HK) so some unfamiliar food could spark a lot of convo's and also give a sense of excitement. Then send her home right away so he/she'll want more!

Been to Central and CWB store, there's also one in Sha Tin I think Steaks are good for its price, comes with fries that you can order more for free (made with truffle oil, so good), interesting drinks.
Edit(additional recommendation): If your looking for unique instead of high end restaurants, there's plenty good stuff in Sham Shui Po, especially if your date is a foodie you'd probably make a good impression. One of my fav is Black Window 黑窗里
