Yep, Forza is bridging the gap between arcade racers and sim racers.
Its controls are as close as possible to arcade so handling is beginner friendly but it aims for a more realistic look for how the cars behave on the track.
Drifting all the time in Mario Kart is a game mechanic that you won't find here.
In Forza you drift only when you need to. Either because you're specifically in a drift challenge / for fun, or because it makes sense strategically (or because you thought you could pass that corner easy and, well, not quite).
So I'm guessing you'd only really drive straight?

Yep.
When exploring the open world you can drive however you want. Drifting is a way to earn skill points that you can spend to unlock special bonuses on each car.
And there's specific events dedicated to drifting:
Drifting PR Stunts, if you're just beginning there's a chance you haven't unlocked them yet. They are road sections where you can drift and score points. From time to time there's a weekly special with a harder to reach goal to get or specific conditions to meet like using a specific car and/or z specific tune value.
Open Drifting, online events where you and other driver drift as much as possible, the one whith the biggest score wins.
Horizon Arcade often has drift challenges.
I see but general races are how fast you can go?
Yes, all races will be about how fast you can go and how efficient and strategic you'll be when managing corners and passing opponents.
Choosing the car + tune combo that fits your playstyle best (and the race's prerequisite) for each race is also an important part of the equation.
If I remember correctly it's not available right away but once you'll have unlocked the Festival Playlist, check it out.
It's a weekly series of events, race, stunts, etc. with varied car requirements which make it an interesting place to try different cars in different conditions which make it a good learning tool.

I suppose it's best at the beginning to see what works for you.
Then it's up to you.
Some are fans of specific models and have several copies of each tuned for different occasions.
Some, like me, enjoy building a diverse garage where each car is like a different blades on a Swiss army knife.
There's no right way as long as you're having fun.
The most cars I like are bumblebee and buggys
I really like the off road buggys
Otherwise im not really sure what other cars I like
I tend to go for stiff that look fast lol
