I've got tarragon, corn, celery, carrot and potatoes in hand. I'm thinking of making a chowder with fish tomorrow. What type of fish should i buy? Or should I even use a fish, can I substitue it with another protein?(My local fish shop recommended scorpionfish and angler fish for some reason)

Here on the Massachusetts South Coast, the best chowder fish is tautog. If you catch any, you’re having chowder for dinner.

Any white fish with firm flesh should do; Cod, Whithing, Pollock, Hake are classic ones.
Choose a firm, meaty fish. You don't want a delicate fish that falls apart (sole, floundrr) or a lean fish (tuna) that will feel dry.
Scorpionfish would work well if there's no cod, salmon or snapper.
Seafood is another option, clams, crab, shrimp, scallops all work well. I sometimes use a mix of seafood and fish.
Bits of bacon or sausage fit in a fish chowder too - my fav is chorizo sausage. Take the skin off, make little balls and fry them up first for max flavour.

The Scorpion fish is a great idea-an invasive species that needs to be dealt with and since the fishmonger will clean it for you the firm mild white flakey flesh will be perfect just don't overcook it.
