The 'nduja is very interesting to me because I've always seen it as a "spreadable" type product. Is it more or less that texture, and you just haven't scooped it out like a delicious meaty melon? Or do you process it into the spreadable product with which most would be familiar?

Thanks. It is spreadable. It is cases and hung in intestines. At this point it has just been cut in half. But you can put a spoon in there and go to town.
