I’m using the attached recipe. I followed it to a T, but somehow forgot the powdered milk. Am I screwed or will it turn out alright? Any alterations to the cooking time? I have a Traeger and plan to smoke it at 165 until it gets up to temp. Thanks
Thanks. Yeah I messed up. I’m usually good about weighing everything beforehand, but the recipe called for non fat dry milk and I only had cultured buttermilk powder, so I was researching if that was acceptable, then completely forgot it 🤦♂️
You can use that instead but normally it is used in place of real fermentation. Fermento is the same thing.
It'll be fine, presuming you worked it enough that it doesn't break. It just won't get tangy without that lactose to feed the starter.
They still have dextrose in the cure mix though. Itll be fine.
powdered milk is a binder, its used to retain moisture in final product. unless you really over cook them, probably wont notice a difference. Assuming you worked the mix enough to get cohesion / protein binding.

Checklists and pre-weighing everything. It will be edible but you're missing the binder and some of the food for the bacteria. They consume the milk powder in addition to the dextrose.
