Training a dog to be reliably off-leash in a variety of environments is no small feat. It requires an immense amount of time, dedication, and consistency.

And through all this the dog never once won the toy.
The one time he came in strong, got a full deep grip, you negatively punished him by outing him. You should have paid him, let him run around with it, and enjoy it before doing more. Teach him to bring the object back to you for more so that you can play, pay him with the win, and still keep going in the play without so much negative punishment.
I get what you're trying to do but you're essentially teaching him that even his best efforts won't get him a win with the toy and possession of the prey item.
