You can save it, use and immersion blender-it should come together!
This is 300g milk chocolate and 100ml double cream
I've heated the creme and poured it over the chocolate, but that wasn't enough to melt the chocolate, so I put the whole thing on a low heat for a couple minutes.
But this liquid a bit like melted butter has formed. It all still tastes fine, of course, but what's happened here? And can it be rescued?
I'm 50/50 on "heat it more and melt it thoroughly" and "leave it to cool and whisk it together"

Try to blend it, if you have an immersion blender, try that. Blend it until itβs shinny and emulsified.
Put it back on a very low heat till it melts down & add 50 ml of brandy & whisk the hell out of it.

I don't know... But try mixing with the mixer for a while until it reaches the point you want.
It looks like what happened is you overcooked your chocolate. You can probably fix it in a high speed mixer or blender.
Last time i tried making a ganache this happened. I just had to let it sit for a bit (~15 minutes maybe?) And then stir. Was perfectly smooth and beautiful.

The immersion blender trick didn't work, not sure why maybe there wasn't enough of it
I saw someone on yt saying that you can add more warm cream in stages and it will start to come back together, and this did work
